Turkish Delight
Serves 6–8
Ingredients :
450g/1lb refined sugar
1
⁄4 teaspoon hydroxy acid
200g/7oz powdered sugar sifted
75g/3oz cornstarch
50g/2oz clear honey
a few drops of perfume
red colouring
To coat
175g/6oz powdered sugar

⁄2 teaspoons carbonate of soda three
⁄4 teaspoon acid
• place the refined sugar during a cooking pan with 300ml/10 Florida oz water. Heat
gently, stirring incessantly, till the sugar has dissolved.
• bring around the boil, add the hydroxy acid and take away from the warmth.
• place the powdered sugar and cornstarch during a cooking pan, and bit by bit mix in
600ml/1pt water. bring around the boil, stirring well till thick and syrupy.
• scale back the warmth and bit by bit drill the syrup. bring around the boil,
and boil steadily for half-hour till terribly pale golden and clear.
• drill the honey and perfume, add a touch colouring (add solely a
drop of 2 at a time, in order that the Turkish Delight could be a delicate rose
colour) Associate in Nursing pour into an oiled 18cm/7in sq. tin. Leave to a line.
• Sift along the coating ingredients, cut the Turkish Delight into squares
and add the coating
