Oatmeal Cookies
Serves 8
Ingredients :
225g/8oz raisins
475g/1lb 1oz flour
1 teaspoon leavening
1 teaspoon ground cinnamon
1
⁄2 teaspoon salt
175g/6oz butter
225g/8oz sugar
2 eggs
475g/1lb 1oz oatmeal
• heat up the kitchen appliance to 190°C/
375°F/Gas mark five. gently grease
a baking receptacle.
• place the raisins during a cooking pan, cover
with water and cook till tender.
Cool in their liquid.
• Sift the flour and add the baking
powder, cinnamon and salt.
• Cream the butter and sugar till
light and downlike. Add the eggs, one
at a time, beating well between
each addition. mix within the flour
mixture. Add the oatmeal and fold
in the raisins.
• Drop a teaspoon of mixture at a
time onto the baking receptacle. Bake for
10 minutes or till barely brown.
Cool and store in layers, with
waxed paper in between.
