Dutch Macaroons
Serves 10
Ingredients :
2 egg whites
225g/8oz castor sugar
175g/6oz ground almonds
225g/8oz bittersweet chocolate (at least
70% cocoa solids)
• heat the kitchen appliance to 180°C/350°F/Gas mark four. cowl 2 baking trays
with paper.
• Whisk the egg whites during a giant bowl till stiff, then fold within the
sugar and almonds.
• place the mixture during a giant piping bag fitted with a 1cm/1
⁄2in plain nozzle,
and pipe fingers regarding seven.5cm/3in long, permitting house for the mixture
to unfold throughout the change of state.
• Bake within the kitchen appliance for 15–20 minutes till golden. Transfer to a wire rack
and leave to cool down. take away the surplus paper from around the edges.
• soften the chocolate during a heatproof bowl set over a pan of boiling
water. Dip the bottom of every biscuit into the chocolate. place the macaroons
on a sheet of baking parchment, and permit to a line.
• Pipe any remaining chocolate over the biscuits during a drizzle pattern of
stripes, and leave to a line before serving.
