Swiss Biscuits
Serves 6
Ingredients :
100g/4oz butter
50g/2oz refined sugar
1 egg

⁄2 tablespoons freshly squeezed
orange juice
1 tablespoon grated orange rind
300g/11oz flour
1
⁄8 teaspoon carbonate of soda
75g/3oz shredded walnuts
100g/4oz chocolate (at
least seventieth cocoa solids),
coarsely grated
• Grease a medium baking receptacle.
• Cream the butter and sugar till light-weight and soft. Add the egg and beat
well. drill the fruit juice and grated zest. during a separate bowl, sift
together with the flour and carbonate of soda, then beat into the creamed
mixture. Stir within the walnuts and chocolate. Wrap the mixture in cling
film. Chill till firm enough to handle. form into a roll concerning
2.5cm/1in in diameter, wrap and chill once more till terribly firm.
• heat up the kitchen appliance to 180°C/350°F/Gas mark four.
• Cut the roll into slices concerning 1cm/1
⁄2in thick, place on the baking receptacle
and bake within the kitchen appliance for 10–12 minutes. take away from the kitchen appliance, slide
off the receptacle employing a spatula and funky on a wire rack
