Crispy Shredded Beef
Serves 4
Ingredients :
2 eggs
1
⁄4 teaspoon salt
4 tablespoons flour
350g/12oz beef beefsteak, cut
into skinny strips
vegetable oil for deep-frying
2 carrots, finely cut
2 spring onions, thinly cut
1 garlic, finely cut
3 tiny recent red chillies, seeded
and thinly sliced
4 tablespoons refined sugar
3 tablespoons rice vinegar
1 tablespoon light-weight condiment
2 tablespoons beef broth
1 teaspoon amylum
• Beat the eggs in an exceeding bowl with the salt and flour, adding a bit water if
necessary to form a batter.
• Add the meat to the batter, and blend well till coated.
• Heat a cooking pan over high heat, then add the oil and warmth till smoking.
Add the meat and fry for five minutes, stirring to separate the strips.
Remove with a slotted spoon, and drain on room paper.
• Add the carrots to the cooking pan, and fry to regarding 1–11
⁄2 minutes, then
remove with a slotted spoon and drain on room paper.
• Pour off the surplus oil, deed regarding one tablespoon within the cooking pan. Add the
spring onions, garlic, chillies and fried carrots, and stir-fry for
1 minute. Add the sugar, vinegar, condiment and stock to the cooking pan, and
bring to the boil. Stir within the asylum, and simmer for some minutes to
thicken the sauce.
• come to the meat to the cooking pan, and stir till well coated with the sauce.
Serve directly.
