Coronation Chicken
Serves 8
Ingredients :1
⁄2 lemon
2.3kg/5lb chicken
1 onion, quartered
1 carrot, quartered
8 black peppercorns, crushed
1 teaspoon salt
For the sauce
1 little onion, chopped
15g/1
⁄2oz butter
1 tablespoon curry paste
1 tablespoon tomato purée
125ml/4fl oz wine
1 bay leaf
juice of 1
⁄2 lemon
2–3 teaspoons apricot jam
300ml/10fl oz mayo
125ml/4fl oz double or whipping
cream, whipped
salt and freshly ground
black pepper
watercress, to garnish
• place the lemon within the cavity of the chicken, then place the chicken during a
a saucepan that it simply fits. Add the onion, carrot, peppercorns and salt to
the pan.
• Add decent water to return a simple fraction of the high the chicken, bring
to the boil, then cowl and cook gently for concerning eleven
⁄2 hours till the
chicken juices run clear.
• Transfer the chicken to an oversized bowl, pour the preparation liquid over it and

juice, then cook for ten minutes. Add the jam, then push the mixture
through a sieve and leave to cool down.
• Beat the mixture into the mayo. Fold within the cream, then season
with salt and pepper. Stir within the chicken items till equally coated. Chill
until able to serve, fancy with touch watercress.
